Filling Preparation

    Sauté Onion

    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Cook Spinach

    Add the fresh spinach to the skillet with the onions. Cook until wilted, approximately 3-4 minutes. Remove from heat.

    Mix Filling

    In a mixing bowl, combine the cooked spinach and onion mixture with crumbled feta cheese, sumac spice, salt, and black pepper. Mix well and set aside to cool.

Dough Preparation

    Make Dough

    In a large bowl, combine 500 grams of all-purpose flour and 1 teaspoon of salt. Gradually add 200 ml of water and 3 tablespoons of olive oil, mixing until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Assembly and Cooking

    Roll Dough

    After resting, divide the dough into two equal portions. Roll out each portion on a floured surface into thin circles, about 25 cm in diameter.

    Fill and Fold

    Place half of the spinach filling on one half of each circle. Fold the other half over to create a triangle, pressing the edges to seal. Crimp the edges with a fork to ensure they are well sealed.

    Cook Spinach Pies

    Heat a non-stick skillet over medium heat. Cook each triangle pie for about 4-5 minutes on each side or until golden brown and crispy. You can brush the pies with a little olive oil before cooking for extra crispiness.

    Once cooked, remove from the skillet and let cool slightly. Serve warm, optionally garnished with extra sumac spice.
