    Sauté Shrimp and Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion is translucent, about 3-4 minutes.

    Cook the Shrimp

    Add the shrimp to the skillet and season with salt and black pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes. Remove the mixture from the skillet and set aside.

    Prepare the Eggs

    In a bowl, whisk together the eggs. Season with a pinch of salt and black pepper.

Cooking

    Cook the Omelet

    In the same skillet, add the remaining tablespoon of olive oil over medium heat. Pour in the whisked eggs, tilting the pan to ensure even coverage. Cook for 2-3 minutes until the edges begin to set.

    Add Filling

    Sprinkle the sautéed shrimp and vegetable mixture evenly over one half of the omelet. Top with shredded Swiss cheese and crumbled feta cheese.

    Fold and Finish Cooking

    Carefully fold the other half of the omelet over the filling and cook for an additional 2-3 minutes until the cheese melts and the eggs are fully cooked.

    Gently slide the omelet onto a plate. Cut in half, if desired, and serve warm.
