Cooking the Main Ingredients

Prepare the Chicken or Gyro
If using chicken, slice the chicken breast into strips. If using gyro, skip to cooking step.

Cook the Chicken
Heat a grill pan over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side or until fully cooked. If using gyro, heat according to package instructions.

Sauté Peppers and Onions
In a separate pan, heat a tablespoon of olive oil over medium heat. Add sliced bell peppers and onions, sautéing until they are soft and slightly caramelized, about 5-7 minutes.

Cook the Rice
In a pot, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is fluffy.
Preparing the Salad

Chop the Vegetables
Dice the cucumber and tomatoes into bite-sized pieces. Crumble the feta cheese and set aside.

Assemble the Salad
In a large bowl, combine lettuce, cucumbers, tomatoes, feta, and olives. Drizzle with Mediterranean or ranch dressing according to preference.
