Slice the Steak
Thinly slice the sirloin steak against the grain into strips about 1/4 inch thick.

Prepare the Vegetables
Slice the bell peppers and onion into thin strips. Chop the romaine lettuce and slice the tomato.

Cook the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are softened. Season with salt and black pepper. Remove from the skillet and set aside.

Grill the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced sirloin steak and cook for about 3-4 minutes until browned, stirring occasionally. Season with additional salt and black pepper to taste.

Prepare the Rolls
Spread mayonnaise and mustard on the insides of the submarine rolls.

Build the Sandwich
Spoon the steak and vegetable mixture into each roll. Top with chopped romaine lettuce and sliced tomatoes.

Cut the sandwiches in half if desired and serve immediately.
