Prepare the Protein

    Grill the Chicken or Gyro

    If using chicken, season both sides with garlic powder, oregano, salt, and black pepper. Grill over medium heat for about 6-7 minutes per side or until cooked through. If using gyro meat, slice it thinly and grill for 5-7 minutes until heated and slightly crispy.

Cook the Rice

    Prepare the Rice

    In a pot, combine the long grain rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed. Fluff with a fork.

Sauté the Vegetables

    Sauté the Vegetables

    Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Heat olive oil in a skillet over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until they are tender but still crisp. Season with salt and pepper to taste.

Prepare the Salad

    Assemble the Salad

    Dice the cucumber and tomatoes. In a bowl, combine the diced cucumbers, tomatoes, feta cheese, and Kalamata olives. Drizzle with Mediterranean or ranch dressing and toss to combine.

Combine and Serve

    In a large bowl, combine the grilled chicken or gyro with the cooked rice and sautéed vegetables. Mix well to combine. Serve the Mediterranean medley alongside the fresh salad.
