Method

Prepare the Filling

    Cook the Rice

    In a small saucepan, add 1 cup of water and bring to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let cool.

    Sauté the Onion and Garlic

    In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Mix Filling Ingredients

    In a mixing bowl, combine the ground beef, cooked rice, sautéed onion and garlic, parsley, dill, cinnamon, salt, and black pepper. Mix well until all ingredients are combined.

Assemble the Dolmas

    Prepare Grape Leaves

    Rinse the grape leaves under cold water to remove excess brine. Lay a grape leaf flat with the stem side facing you.

    Stuff and Roll

    Place about 1-2 tablespoons of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with the remaining leaves and filling.

Cook the Dolmas

    Arrange and Steam

    Place the rolled dolmas seam-side down in a large pot. Add enough water to cover the dolmas halfway, and bring to a simmer. Cover the pot and steam for about 30-40 minutes until the meat is cooked through.

Prepare Tzatziki Sauce

    Mix Tzatziki Ingredients

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped dill. Stir until well combined.

Serve

    Plate the Dolmas

    Arrange the cooked dolmas on a plate. Serve warm with tzatziki sauce on the side for dipping.
