Preparation

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, cinnamon, olive oil, chopped parsley, and lemon juice. Mix well until all ingredients are thoroughly combined.

  2. 2

    Marinate the Lamb

Add the ground royal lamb to the marinade mixture. Use your hands to mix the meat with the marinade until well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight to let the flavors meld.

Cooking

  1. 3

    Prepare the Grill

Preheat your charcoal grill to medium-high heat. Ensure that the grill grates are clean and lightly oiled to prevent sticking.

  2. 4

    Form the Kebabs

Once the lamb has marinated, take small portions of the meat mixture and mold them around skewers in the shape of elongated patties. Ensure they are tightly packed to prevent them from falling apart while grilling.

  3. 5

    Grill the Kebabs

Place the skewered kebabs on the grill. Grill for about 8-10 minutes, turning occasionally, until they are nicely charred and cooked through. The internal temperature should reach at least 70°C (160°F).

  4. 6

    Serve

Remove the kebabs from the grill and let them rest for a few minutes. Serve warm with your choice of flatbread, salads, or sauces.
