Preparation of Vegetables

    Chop Cucumber

    Wash the cucumbers thoroughly. Cut them into bite-sized pieces or half-moons, depending on your preference. Place them in a large mixing bowl.

    Prepare Cherry Tomatoes

    Rinse the cherry tomatoes and cut them in half. Add to the mixing bowl with the cucumbers.

    Slice Red Onion

    Peel the red onion and slice it thinly. You may soak the slices in cold water for 10 minutes to reduce the sharpness if desired. Add to the bowl.

    Chop Bell Peppers

    Wash the bell peppers, remove the seeds, and chop them into bite-sized pieces. Combine them with the other vegetables in the bowl.

    Add Kalamata Olives

    Add the Kalamata olives to the mixing bowl with the other chopped vegetables.

Preparation of Cheese and Dressing

    Crumble Feta Cheese

    Crumble the feta cheese into small pieces and set aside.

    Prepare Dressing

    In a separate bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper until well combined.

Assembly

    Combine Ingredients

    Pour the dressing over the mixed vegetables in the bowl. Toss gently to combine all ingredients evenly.

    Add Feta Cheese

    Sprinkle the crumbled feta cheese over the salad and toss gently to incorporate.

    Transfer the salad to a large serving tray. Optionally, garnish with extra olives or feta on top before serving.
