Method
Marinating the Lamb

Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, black pepper, lemon juice, chopped mint, and chopped parsley. Mix well.

Marinate the Lamb
Add the cubed lamb shoulder to the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Preparing the Kebab

Preheat the Grill
Preheat your grill to medium-high heat.

Assemble the Kebabs
Thread the marinated lamb cubes onto skewers, alternating with pieces of bell peppers and slices of red onion.

Grill the Kebabs
Place the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
Serving the Dish

While the kebabs are grilling, prepare the serving plates by arranging cherry tomatoes, pita bread, and a generous dollop of tzatziki sauce.
