Kabab Preparation

    Prepare the Marinade

    In a large mixing bowl, combine the ground lamb, minced garlic, chopped onion, ground cumin, ground coriander, paprika, salt, black pepper, and chopped parsley. Mix until all ingredients are well combined.

    Shape the Kababs

    Divide the lamb mixture into 6 equal portions. Mold each portion around a skewer, shaping it into a long, flat kabab. Ensure the meat is pressed firmly onto the skewer.

    Marinate

    Drizzle the olive oil over the shaped kababs, cover with plastic wrap, and let them marinate in the refrigerator for at least 30 minutes.

Tzatziki Sauce Preparation

    Make the Sauce

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Mix well until smooth and set aside in the refrigerator for flavors to meld.

Cooking and Serving

    Cook the Kababs

    Preheat a grill or oven to medium-high heat. Grill the kababs for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.

    Prepare the Plate

    While the kababs are cooking, wash the romaine lettuce leaves and slice the tomato. Arrange the lettuce and tomato slices on a serving platter.

    Serve

    Once the kababs are cooked, remove them from the grill. Serve hot, placing the kababs on the lettuce leaves and topping them with tzatziki sauce and tomato slices.
