Fried Kibby Recipe

Prepare Kibby Filling

    Cook the Filling

    In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent. Then add the ground beef, allspice, cinnamon, salt, and black pepper. Cook until the beef is browned and fully cooked. Stir in the pine nuts and cook for an additional 2-3 minutes. Remove from heat and let cool.

Prepare Kibby Shell

    Soak the Bulgur

    In a large bowl, combine the fine bulgur wheat and warm water. Let it soak for about 30 minutes until the bulgur is soft and has absorbed the water.

    Mix the Shell

    Once the bulgur is soaked, drain any excess water. In a mixing bowl, combine the soaked bulgur, ground sirloin, salt, and black pepper. Mix well until it forms a cohesive dough.

Assemble Kibby

    Form the Kibby

    Divide the kibby shell mixture into two equal parts. On a clean surface, flatten each part into a disc shape, about 1/2 inch thick. Place a portion of the cooled filling in the center and fold the dough over to encase the filling. Pinch the edges to seal, forming a loaf shape. Repeat with the remaining mixture.

Fry the Kibby

    Heat Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until hot.

    Fry the Kibby

    Carefully place the kibby loaves in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare Tzatziki Sauce

    Mix the Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt. Mix well and adjust seasoning to taste. Refrigerate until ready to serve.
