Falafel

Prepare the Falafel Mixture
In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, pepper, and flour. Pulse until the mixture is coarsely blended but not pureed.

Shape the Falafel
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Fry the Falafel
In a deep skillet, heat vegetable oil over medium heat. Fry the falafel in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.

Cook the Rice
In a saucepan, combine basmati rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until rice is tender and water is absorbed.

Assemble the Salad
In a large bowl, combine diced cucumber, tomatoes, feta cheese, and olives. Drizzle with olive oil and toss gently. Add Mediterranean or ranch dressing to taste.
Pita

Warm the Pita
If desired, warm the pita bread in a toaster or on a skillet for a minute until soft.
