    Rinse and Soak Chickpeas

    Rinse the canned chickpeas under cold water and drain. If using dried chickpeas, soak them overnight in water and then drain before using.

    Prepare Fresh Herbs

    Chop the fresh parsley and cilantro finely. Set aside for later.

    Chop Onion and Garlic

    Finely chop the red onion and garlic cloves. Set aside.

Mixing Ingredients

    Combine Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, lemon juice, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is well combined but still has some texture.

    Add Flour and Water

    Transfer the mixture to a large bowl. Gradually add the all-purpose flour and water. Mix until a cohesive dough forms. If the mixture is too wet, add more flour, a tablespoon at a time.

Forming and Cooking Falafel

    Shape Falafel

    Using your hands, form the mixture into small balls or patties, about 1 to 1.5 inches in diameter. Place them on a tray lined with parchment paper.

    Heat Oil

    In a large pot or deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Falafel

    Carefully drop the falafel balls into the hot oil, ensuring not to overcrowd the pan. Fry in batches for about 3-4 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

    Serve the falafel warm with your favorite sauces, such as tahini or hummus, and enjoy in pita bread with fresh vegetables.
