Prepare the Rice
Rinse the long-grain rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

Mix the Filling
In a large bowl, combine the prepared rice, cooked onion and garlic, parsley, dill, pine nuts, lemon juice, salt, and pepper for the vegetarian version. For the beef version, add the ground beef to the same mixture and mix well.
Rolling the Dolmas

Prepare the Grape Leaves
Lay a grape leaf on a flat surface, vein side up. Trim the stem if necessary.

Fill the Leaves
Place a tablespoon of filling near the stem end of the leaf. Fold the sides over the filling and then roll tightly from the stem end to the tip. Repeat until all filling is used.
Cooking

Arrange in a Pot
Place the rolled dolmas seam side down in a large pot. Pack them tightly together to prevent them from unrolling during cooking.

Add Cooking Liquid
Add enough water or broth to cover the dolmas halfway. You may add a splash of lemon juice for extra flavor.

Simmer
Cover the pot and bring to a gentle simmer. Cook for about 45 minutes to 1 hour, or until the rice is tender and the grape leaves are soft.
