Preparation of Marinades

    Beef Kabab Marinade

    In a bowl, combine the cubed beef tenderloin, yogurt, olive oil, minced garlic, ground cumin, ground coriander, salt, black pepper, and lemon juice. Mix well until the beef is evenly coated. Cover and refrigerate for at least 2 hours or overnight for best results.

    Chicken Kabab Marinade

    In a separate bowl, mix together the cubed chicken breast, yogurt, olive oil, minced garlic, ground paprika, ground turmeric, salt, black pepper, and lemon juice. Ensure the chicken is well coated. Cover and refrigerate for at least 2 hours or overnight.

    Lamb Lula Preparation

    In a mixing bowl, combine the ground lamb, finely chopped onion, minced garlic, ground cumin, ground coriander, salt, black pepper, and chopped parsley. Mix thoroughly until all ingredients are well combined. Form into oval-shaped patties or mold onto skewers. Set aside.

Grilling the Kebabs

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, simply brush them with vegetable oil.

    Assemble Kebabs

    Thread the marinated beef and chicken pieces onto the skewers, alternating between beef and chicken. For lamb lula, thread the patties onto separate skewers.

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill Kebabs

    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the meat is cooked through and has a nice char. The internal temperature should reach 74°C (165°F) for chicken and 63°C (145°F) for beef/lamb.

    Serve

    Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with sides like rice, pita bread, or a fresh salad.
