Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine the olive oil, garlic powder, cumin, paprika, coriander, salt, black pepper, and lemon juice.

    Marinate the Chicken

    Cut the chicken breast into thin strips and add to the marinade. Mix well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes, or overnight for better flavor.

Cooking the Chicken and Veggies

    Cook the Chicken

    In a skillet over medium heat, add the marinated chicken strips. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced onion and diced bell pepper. Sauté for about 3-4 minutes, until the onions are translucent and peppers are slightly softened.

Preparing the Omelet

    Whisk the Eggs

    In a bowl, whisk together the eggs and milk until well combined.

    Cook the Omelet

    In the same skillet, melt the butter over medium-low heat. Pour in the whisked eggs and gently swirl the pan to spread them evenly. Cook until the edges start to set, about 2-3 minutes.

    Add Filling

    Once the omelet is set but still slightly runny on top, add the cooked chicken, sautéed onions, bell peppers, and Swiss cheese evenly across one half of the omelet.

    Carefully fold the omelet in half over the filling. Cook for another minute until the cheese melts. Slide the omelet onto a plate and sprinkle with crumbled feta cheese before serving.
