Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, ground coriander, salt, black pepper, and chopped parsley. Mix well to create a marinade.

Marinate the Chicken
Cut the boneless chicken breast into bite-sized pieces and add them to the marinade. Stir well to ensure all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. This step is optional if using metal skewers.

Assemble the Kebabs
Thread the marinated chicken pieces onto the skewers, alternating with bell pepper and red onion chunks for flavor and color.

Cook the Kebabs
Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
