Method
Marinating the Chicken

In a large bowl, combine yogurt, minced garlic, lemon juice, ground cumin, paprika, salt, black pepper, and olive oil. Mix well until smooth.

Add the boneless chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight for best flavor.
Making the Tzatziki Sauce

Combine Ingredients
In a medium bowl, mix together Greek yogurt, grated cucumber (ensure it is well-drained), minced garlic, olive oil, lemon juice, fresh dill, salt, and black pepper until fully combined.

Chill the Sauce
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Preparing the Salad

Prepare the Vegetables
Chop the romaine lettuce and dice the tomatoes. Place them in a large salad bowl and toss them together.
Assembling and Cooking the Kebabs

Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
