    Prepare the Ingredients

    Dice the bell pepper and onion, slice the mushrooms, and wash the spinach. If using cooked bacon or sausage, chop them into bite-sized pieces.

    Cook the Vegetables

    In a non-stick skillet, heat a tablespoon of oil over medium heat. Add the diced onion and bell pepper. Sauté for about 2-3 minutes until softened. Add the sliced mushrooms and spinach, and cook for another 2-3 minutes until the spinach wilts and the mushrooms are tender.

    Prepare the Eggs

    In a bowl, crack the three eggs and whisk them together until well combined. Season with salt and pepper to taste.

    Combine Ingredients

    Add the cooked vegetables and your choice of protein (bacon or sausage) to the egg mixture and stir gently to combine.

    Cook the Eggs

    Pour the egg mixture back into the skillet over medium-low heat. Cook for 2-3 minutes until the edges begin to set. Using a spatula, gently lift the edges and allow uncooked egg to flow underneath.

    Add Cheese and Finish Cooking

    Once the eggs are mostly set, place the American or Swiss cheese slices on top. Cover the skillet with a lid and let cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
