    Prepare the Salad Base

    Wash and chop the romaine lettuce into bite-sized pieces. Peel and slice the cucumber into thin rounds. Halve the cherry tomatoes and thinly slice the red onion. Chop the fresh parsley. In a large salad bowl, combine the chopped romaine, cucumber, tomatoes, red onion, and parsley.

    Marinate the Beef

    In a bowl, mix together olive oil, minced garlic, ground cumin, paprika, coriander, cinnamon, salt, black pepper, and lemon juice. Add the beef flank steak to the marinade, ensuring it is fully coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

    Cook the Beef

    Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and grill or sear it for about 4-5 minutes on each side, or until it reaches your desired level of doneness. Once cooked, remove from heat and let it rest for a few minutes before slicing into thin strips.

    In a bowl, combine yogurt, tahini, minced garlic, lemon juice, water, and salt. Whisk until smooth and well combined. Adjust the consistency with more water if necessary.

    Top the salad base with the sliced beef shawarma. Drizzle the yogurt-tahini dressing over the beef and salad. Toss gently to combine, or serve with extra dressing on the side.
