Prepare the Marinade
In a large bowl, combine minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, olive oil, lemon juice, salt, and black pepper. Mix well.

Add the beef sirloin to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for best flavor.

Once rested, slice the beef thinly against the grain.

While the beef is resting, prepare the vegetables by slicing the onion, dicing the tomato and cucumber, and chopping the parsley. Place them in a serving bowl.

To serve, place sliced beef on a plate alongside the prepared vegetables, pita bread, and drizzle tahini sauce over the top. Garnish with additional parsley if desired.
