Preparation of Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Cooking the Fish

    Season the Fish

    Season the 11 oz. barramundi fillet with salt and black pepper on both sides.

    Cook the Fish

    In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned barramundi fillet and cook for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove from the skillet and set aside.

Preparing the Toppings

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onions, and sauté for about 3-4 minutes, or until they are tender and slightly caramelized. Remove from heat.

Sauteed Veggies

    Cook the Sauteed Veggies

    In the same skillet, add a little more olive oil if necessary. Add the sliced zucchini, carrot, and minced garlic. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Season with salt and pepper to taste.

Plating

    Serve the Dish

    On a plate, serve a portion of the cooked rice, topped with the sautéed bell peppers and onions. Place the barramundi fillet on top, and arrange the sautéed veggies on the side. Add a generous scoop of hummus alongside.
