    Prepare the Vegetables

    Wash all vegetables (cucumbers, carrots, radishes, and cauliflower) thoroughly under running water. Peel the carrots and cut all vegetables into bite-sized pieces.

    Prepare the Olives

    If using brined olives, rinse them under cold water to remove excess salt. Otherwise, simply set the olives aside for pickling.

Pickling Liquid

    Make the Pickling Brine

    In a large pot, combine water, white vinegar, salt, and sugar. Bring to a boil over medium heat, stirring until the salt and sugar dissolve completely.

    Add Aromatics

    Once boiling, add garlic cloves, bay leaves, black peppercorns, coriander seeds, and chili flakes to the pot. Reduce heat and let simmer for about 5 minutes.

Pickling Process

    Pack the Jars

    In sterilized glass jars, layer the prepared vegetables and olives. Make sure to pack them tightly but not so much that they get crushed.

    Add the Brine

    Carefully pour the hot pickling liquid over the packed vegetables and olives, ensuring that they are completely submerged. Leave a little space at the top of the jars.

    Seal and Cool

    Seal the jars tightly with lids. Allow them to cool to room temperature, then refrigerate for at least 24 hours before consuming for the flavors to develop.
