Hummus

    Prepare the chickpeas

    If using dried chickpeas, soak them overnight and boil until soft. If using canned, rinse and drain them.

    Blend the ingredients

    In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, water, and salt. Blend until smooth.

    Adjust the consistency

    If the hummus is too thick, add more water or olive oil until desired consistency is reached.

Baba Ganoush

    Roast the eggplant

    Pierce the skin of the eggplant with a fork and roast it in an oven at 400°F (200°C) for about 30-40 minutes until soft. Let it cool.

    Prepare the baba ganoush

    Scoop out the flesh of the eggplant and combine it with tahini, lemon juice, garlic, olive oil, and salt in a food processor. Blend until smooth.

Labneh

    Prepare the labneh

    Mix the plain yogurt with salt and strain it through a cheesecloth for at least 4 hours or overnight in the refrigerator to achieve a thick consistency.

Veggie Grape Leaves

    Prepare the filling

    In a bowl, mix the rice, chopped onion, parsley, lemon juice, and salt.

    Stuff the grape leaves

    Lay a grape leaf flat, place a spoonful of filling in the center, fold the sides over, and roll tightly.

    Cook the stuffed grape leaves

    Place the stuffed grape leaves in a pot, cover with water, and simmer for about 30 minutes.

Tabouli

    Prepare the bulgur

    Soak bulgur wheat in hot water for 20 minutes, then drain and fluff with a fork.

    Mix the ingredients

    In a large bowl, combine bulgur, parsley, diced tomato, green onion, lemon juice, olive oil, and salt. Mix well.

Falafel

    Prepare the chickpeas

    Soak dried chickpeas overnight, then drain and blend with onion, parsley, cumin, baking powder, salt, and water until a coarse mixture forms.

    Form the falafel

    Shape the mixture into small balls or patties.

    Fry the falafel

    Heat oil in a deep pan and fry the falafel until golden brown, about 3-4 minutes per side.

Kibby

    Prepare the kibby filling

    In a pan, sauté chopped onion and pine nuts until golden, add ground meat, spices, and salt. Cook until meat is browned.

    Prepare the kibby dough

    Soak bulgur in water for 30 minutes, then mix with ground beef/lamb and salt to form a dough.

    Shape and fry the kibby

    Shape the dough into small balls, stuff with filling, and then fry in hot oil until golden brown.
