Pasta

Method

Prepare Pasta

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Sauté Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the bell peppers, zucchini, broccoli, and carrots to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

  2. 3

    Add Cherry Tomatoes

Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they soften slightly.

Make Sauce

  1. 4

    Combine Sauce Ingredients

Pour the vegetable broth into the skillet and stir to combine. Let it simmer for about 2 minutes. Season with salt and black pepper to taste, then remove from heat.

  2. 5

    Add Parmesan and Basil

Stir in the grated Parmesan cheese and chopped fresh basil until well combined.

Combine and Serve

  1. 6

    Combine Pasta and Sauce

Add the drained spaghetti to the skillet with the vegetable and sauce mixture. Toss to coat the pasta evenly with the sauce and vegetables.

  2. 7

    Serve

Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
