Method

Preparing the Salad Base

  1. 1

    Wash and Dry Greens

In a large bowl, add the mixed greens and rinse them under cold water. Use a salad spinner to dry them thoroughly or pat them dry with a clean kitchen towel.

  2. 2

    Prepare Vegetables

Slice the cucumber into thin rounds. Halve the cherry tomatoes. Thinly slice the red onion. Peel and shred the carrot or cut it into thin matchsticks.

  3. 3

    Combine Salad Ingredients

In the bowl with the dried mixed greens, add the sliced cucumber, halved cherry tomatoes, sliced red onion, and shredded carrot. Toss gently to combine.

Making the Vinaigrette

  1. 4

    Combine Ingredients

In a small bowl or jar, combine the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper.

  2. 5

    Whisk or Shake

Whisk the vinaigrette with a fork or a whisk until well combined. Alternatively, if using a jar, seal the lid and shake vigorously until the ingredients are emulsified.

Assembling the Salad

  1. 6

    Dress the Salad

Pour the vinaigrette over the salad mixture. Toss gently to ensure all the ingredients are coated with the dressing.

  2. 7

    Serve

Transfer the dressed salad to serving plates or bowls and enjoy immediately.
