Marinade Preparation

Combine Marinade Ingredients
In a large bowl, combine the jerk seasoning, minced garlic, grated ginger, lime juice, soy sauce, olive oil, salt, and black pepper. Mix well to create a marinade.

Marinate Chicken
Add the chicken thighs to the marinade and ensure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Cooking Rice and Peas

Prepare Ingredients
In a medium saucepan, combine the long-grain rice, kidney beans, coconut milk, water, chopped scallions, thyme, and salt.

Cook Rice
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
Grilling Chicken

Preheat Grill
Preheat your grill to medium-high heat.

Grill Chicken
Remove the chicken from the marinade and discard any leftover marinade. Place the chicken thighs on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Serving

Plate the Dish
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Serve the jerk chicken alongside the rice and peas.
