Prepare Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir occasionally until completely melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs and granulated sugar until the mixture becomes pale and slightly thickened.

Whip Heavy Cream
In another bowl, whip the heavy cream until soft peaks form. Carefully fold the whipped cream into the chocolate mixture in three additions, making sure not to deflate the whipped cream.

Chill the Mousse
Divide the mousse into serving dishes and refrigerate for at least 2 hours or until set.
Prepare Whipped Cream Topping

Whip Cream
In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.

Serve
Once the mousse is set, top each serving with a dollop of the whipped cream topping before serving.
