Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with cocoa powder to prevent sticking.

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

    Mix Dry Ingredients

    In a separate bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.

    Combine Wet and Dry Ingredients

    In another bowl, whisk together the eggs, egg yolk, and vanilla extract. Gradually add the melted chocolate mixture to the egg mixture, stirring until smooth. Then, fold in the dry ingredients until just combined.

    Pour into Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

Baking

    Bake the Cakes

    Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes. The edges should be firm, but the center will still look soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

    Invert and Serve

    Place a plate on top of each ramekin and invert it to release the cake. Serve immediately with a scoop of vanilla ice cream on top, dusted with powdered sugar and garnished with fresh berries if desired.
