Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin fries, about 1/4 inch thick.

  2. 2

    Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

  3. 3

    Season the Fries

In a bowl, toss the fries with salt and pepper until evenly coated.

  4. 4

    Fry the Potatoes

Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

Making the Burro Sauce

  1. 5

    Melt the Butter

In a small saucepan, melt the unsalted butter over low heat.

  2. 6

    Add the Seasonings

Once melted, add the minced garlic, chili powder, cumin, and lemon juice. Stir well and let simmer for 2-3 minutes.

  3. 7

    Finish the Sauce

Remove from heat and stir in the chopped cilantro. Adjust seasoning if necessary.

Assembling the Burro Fries

  1. 8

    Drizzle the Sauce

Place the fried potatoes on a serving platter and drizzle the burro sauce generously over the fries.

  2. 9

    Add Toppings

Top with grated Parmesan cheese, sour cream, and jalapeño slices according to your taste.

  3. 10

    Serve Immediately

Serve the burro fries hot and enjoy!
