Prepare the Ingredients
Gather all ingredients. Cook Mexican rice according to package instructions and prepare charro beans if not using canned.

Preheat Oven
Preheat your oven to 350°F (175°C).

Soften Tortillas
In a skillet, heat each corn tortilla for about 10-15 seconds on each side until soft and pliable.

Assemble Enchiladas
Spread 1/4 cup of red enchilada sauce on the bottom of a baking dish. Take a tortilla, fill it with 2 tablespoons of Oaxacan cheese and 2 tablespoons of charro beans, roll it tightly, and place it seam side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the dish, pour the remaining red enchilada sauce over the top and sprinkle the remaining Oaxacan cheese evenly.

Bake
Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.

Serve
Remove from the oven and let cool for a few minutes. Serve hot with Mexican rice on the side.
