    Prepare the Marinade

    In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, salt, and ancho chili powder to form a marinade.

    Marinate the Pork

    Cut the pork shoulder into large chunks and coat them with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan, add water, cover tightly with foil, and cook for 3 hours or until the pork is tender.

    Prepare the Toppings

    While the pork is cooking, prepare the pickled onions and crumble the queso fresco.

    Warm the Tortillas

    In a skillet, warm the corn tortillas over medium heat until they are pliable.

    Assemble the Combo

    Once the pork is cooked, shred it with two forks. Serve the shredded pork in warm tortillas, topped with pickled onions and queso fresco, alongside ancho salsa.
