Heat the charro beans in a saucepan over medium heat until warmed through. Stir occasionally to prevent sticking.

Prepare the Mexican rice according to package instructions, typically by boiling in water until fluffy.

If not using store-bought, combine chopped parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper in a bowl. Mix well to create chimichurri sauce.
