Brisket Preparation

    Sear the Brisket

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the brisket with salt, black pepper, garlic powder, and onion powder. Sear the brisket on all sides until browned, about 4-5 minutes per side.

    Braising the Brisket

    Transfer the seared brisket to a slow cooker. Pour in the beef broth and add the bay leaves. Cover and cook on low for 8 hours or until the brisket is tender and easy to shred.

Pickled Red Onion Preparation

    Prepare the Pickling Solution

    In a medium saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve.

    Pickle the Onions

    Slice the red onion thinly and place it in a jar. Pour the hot pickling solution over the onions, ensuring they are fully submerged. Let them cool to room temperature, then refrigerate for at least 1 hour before serving.

Secret Sauce Preparation

    In a bowl, combine mayonnaise, sriracha, lime juice, garlic powder, and salt. Mix well until smooth. Adjust salt to taste.

    Once the brisket is tender, shred it using two forks. Serve the shredded brisket on a plate or in a sandwich, topped with pickled red onion, cotija cheese, and drizzled with the secret sauce.
