Yuca Fries
Garlic Aioli
Method
Yuca Fries
- 1
Prepare the Yuca
Peel the yuca using a knife, making sure to remove the tough outer skin. Cut the yuca into thick fries, about 1/4 to 1/2 inch wide.
- 2
Boil the Yuca
Place the cut yuca fries in a large pot and cover with water. Add a pinch of salt. Bring to a boil and cook for about 20 minutes, or until the yuca is tender but not falling apart.
- 3
Drain and Dry
Drain the boiled yuca fries and let them cool for a few minutes. Pat them dry using a paper towel to remove excess moisture.
- 4
Fry the Yuca
In a large frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the yuca fries in batches. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and place on paper towels to drain excess oil.
- 5
Season
While still hot, sprinkle the yuca fries with salt and black pepper to taste.
Garlic Aioli
- 6
Prepare Garlic
Mince the garlic cloves finely or use a garlic press.
- 7
Combine Ingredients
In a medium bowl, mix together the mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper until smooth.
- 8
Chill
Cover the garlic aioli and refrigerate for at least 30 minutes to let the flavors meld.
