Marinating the Pork

    Prepare the Marinade

    Remove the stems and seeds from the guajillo and ancho chiles. Toast them in a dry skillet over medium heat for 2-3 minutes until fragrant. Blend the chiles with pineapple juice, garlic, cumin, oregano, salt, black pepper, and white vinegar until smooth.

    Marinate the Pork

    Cut the pork shoulder into small pieces and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, shaking off excess. Grill the pork for about 10-15 minutes, turning occasionally, until cooked through and slightly caramelized. Let it rest for 5 minutes before slicing.

Making Pineapple Salsa

    In a bowl, combine diced pineapple, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

    Warm the corn tortillas on a skillet or grill. Place sliced pork on each tortilla, top with pineapple salsa, and garnish with sliced radishes. Serve with lime wedges on the side.
