Prepare the Plantains
Peel the ripe plantains by cutting off the ends and making a slit along the length of the fruit. Carefully remove the skin. Slice the plantains diagonally into approximately 1/2 inch thick pieces.

Heat the Oil
In a large frying pan, pour in the vegetable oil. Heat the oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of plantain in; it should sizzle upon contact.

Fry the Plantains
Once the oil is hot, carefully add the sliced plantains to the pan in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.

Season the Plantains
After frying the plantains, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to absorb excess oil. While they are still hot, sprinkle with salt, garlic powder, and black pepper to taste.
