Method

Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat. Stir in the butter and shredded smoked gouda cheese until melted and creamy. Set aside and keep warm.

Cook the Shrimp and Vegetables

    Cook the Bacon

    In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and drain on paper towels, leaving the rendered fat in the skillet.

    Sauté the Vegetables

    In the same skillet with the bacon fat, add the diced onion and bell pepper. Sauté until the onions are translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Cook the Shrimp

    Add the shrimp to the skillet. Sprinkle the blackening seasoning over the shrimp and toss to coat. Cook for about 3-4 minutes or until the shrimp are pink and opaque, stirring occasionally.

Serve

    Combine and Garnish

    To serve, spoon the creamy grits onto plates, top with the sautéed shrimp and vegetable mixture. Garnish with crispy bacon and sliced green onions. Enjoy your Shrimp Grits!
