Method

Preparing the Rockfish

    Marinate the Fish

    Place the rockfish fillets in a bowl and pour buttermilk over them. Cover and refrigerate for at least 30 minutes.

    Coat the Fish

    In a shallow bowl, mix the flour, cornmeal, salt, and black pepper. Remove the rockfish from the buttermilk and coat each fillet in the flour mixture.

    Fry the Fish

    In a large pot, heat vegetable oil over medium-high heat. Once hot, carefully place the coated rockfish into the oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Making the Salsa Verde

    Blend Ingredients

    In a food processor, combine cilantro, parsley, garlic, lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning to taste and set aside.

Frying the Yuca

    Prepare the Yuca

    Peel the yuca and cut it into 1-inch pieces. Boil in salted water until tender, about 20 minutes. Drain and let cool.

    Fry the Yuca

    Heat vegetable oil in a large pot over medium-high heat. Fry the cooled yuca pieces until golden and crispy, about 3-4 minutes. Drain on paper towels and season with salt.

Making the Garlic Aioli

    Combine Ingredients

    In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt. Stir until well combined and set aside.

Preparing the Jicama Slaw

    Shred the Vegetables

    Julienne the jicama and carrot. Shred the cabbage and mix all the vegetables in a bowl.

    Dress the Slaw

    Add lime juice and salt to the mixed vegetables and toss to combine. Let sit for 10 minutes before serving.
