Prepare the Pico de Gallo
If you haven't already, make your pico de gallo by combining diced tomatoes, onions, cilantro, lime juice, salt, and pepper in a bowl. Mix well and set aside.

Grate the Cheese
Grate the Monterey Jack cheese and set it aside for assembly.
Cooking

Heat the Pan
In a large skillet, heat the olive oil or butter over medium heat until melted and hot.

Assemble the Quesadilla
Place one flour tortilla in the skillet. Sprinkle half of the grated Monterey Jack cheese evenly over the tortilla. Add a generous dollop of crema and half of the pico de gallo. Top with another tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula.

Finish Cooking
Cook the other side for an additional 3-4 minutes until golden brown and the cheese is fully melted. Remove from the skillet and allow to cool slightly.

Serve
Cut the quesadilla into wedges and serve with extra crema and pico de gallo on the side.
