Marinate the Shrimp
In a large bowl, combine olive oil, minced garlic, lime juice, tequila, chili powder, salt, and black pepper. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.

Cook the Shrimp
Preheat a grill or grill pan over medium-high heat. Remove the shrimp from the marinade and grill for about 2-3 minutes on each side until they are cooked through and opaque. Remove from heat and set aside.

Combine Salsa Ingredients
In a medium bowl, combine the roasted corn, diced red bell pepper, diced red onion, minced jalapeño, chopped cilantro, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.

Plate the Dish
On a serving platter, arrange the grilled shrimp and top with a generous amount of roasted corn salsa. Sprinkle crumbled cotija cheese and additional chopped cilantro over the top for garnish.
