Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the granulated sugar and mix until well combined. Add the sour cream, lime juice, lime zest, and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing just until incorporated. Finally, fold in the finely grated cucumber until evenly distributed.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

After cooling, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight for the best texture.
