Prepare the Dough
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

Mix in Flour
Once boiling, remove from heat and stir in all-purpose flour until a ball forms. Let it cool for about 5 minutes.

Add Eggs
Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat Oil
In a deep pot, heat vegetable oil to 350°F (175°C).

Pipe Churros
Transfer the dough to a piping bag fitted with a star tip. Pipe 4 to 6-inch strips into the hot oil, cutting them with scissors.

Fry Churros
Fry the churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Cinnamon Sugar Coating
In a bowl, mix ground cinnamon and sugar. Roll the hot churros in the cinnamon sugar mixture until coated.

Heat Heavy Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Melt Chocolate
Remove from heat and add semi-sweet chocolate chips. Let it sit for a minute, then stir until smooth.

Add Vanilla
Stir in vanilla extract until well combined.
