    Prepare the Chorizo

    In a large skillet over medium heat, add the chorizo. Cook for about 8-10 minutes, breaking it apart with a spatula, until fully cooked and browned. Drain any excess fat if desired.

    While the chorizo is cooking, peel and finely chop the white onion.

    Rinse the cilantro under cool water, shake off excess moisture, and finely chop the leaves.

    Crumble the cotija cheese into small pieces using your fingers or a fork.

Assembly

    In a serving bowl, mix together the cooked chorizo, chopped onion, and cilantro until well combined.

    Top the chorizo mixture with crumbled cotija and drizzle with crema. Serve warm as a filling for tacos or as a standalone dish.
