Method
Preparing the Queso Blanco
- 1
Melt the Cheeses
In a medium saucepan over low heat, combine the white American cheese and Monterey Jack cheese. Add the heavy cream and stir frequently until the cheeses are fully melted and combined.
- 2
Add Remaining Ingredients
Once the cheese is melted, add the diced tomatoes with green chilies, diced jalapeños, garlic powder, onion powder, salt, and black pepper. Stir until everything is well incorporated and heated through.
- 3
Garnish (Optional)
If desired, stir in the chopped fresh cilantro just before serving.
Making the Chips
- 4
Prepare the Tortillas
Cut the corn tortillas into triangles or strips, as desired.
- 5
Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until hot.
- 6
Fry the Chips
Carefully add the tortilla pieces in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy, turning occasionally.
- 7
Drain and Season
Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.
