Method
Chilaquiles Preparation
- 1
Prepare the Tortilla Chips
In a large skillet over medium heat, lightly fry the corn tortilla chips until they are crispy and golden brown, about 3-5 minutes. Remove from heat and set aside.
- 2
Add the Salsa
In the same skillet, add the green salsa to the fried tortilla chips, and gently stir to coat the chips evenly. Cook for about 2-3 minutes until the salsa is heated through.
- 3
Cook the Eggs
In a separate frying pan, crack the eggs and cook them to your preference (sunny-side up, scrambled, or over-easy). Season with salt and pepper.
- 4
Assemble the Chilaquiles
Remove the skillet from heat. Transfer the salsa-coated tortilla chips to a serving platter. Top with the cooked eggs and sprinkle the cheese over everything.
