Method
Prepare the Chicken
- 1
Sauté the Chicken
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and black pepper. Add chicken to the skillet and sauté for 6-7 minutes on each side until cooked through and golden brown. Remove from skillet and let it rest.
Make the Verde Cream

Blend the Verde Cream
In a blender, combine sour cream, fresh cilantro, lime juice, and jalapeño. Blend until smooth. Adjust seasoning with salt if necessary.
Fry the Plantains

Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. Heat vegetable oil in a frying pan over medium-high heat. Once the oil is hot, add the plantain slices in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Cook the Golden Rice
- 4
Prepare and Cook the Rice
In a medium saucepan, combine long-grain rice, chicken broth, turmeric, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork before serving.
Assemble the Dish

Plate the Chicken Verde
Slice the sautéed chicken breast and place it on a plate. Drizzle with verde cream. Serve with fried plantains on the side and a generous scoop of golden rice. Garnish with fresh cilantro.
