Cooking the Chicken

    Cook the Chicken

    In a pot, place the chicken breasts and cover with water. Bring to a boil and then reduce to a simmer. Cook for about 20 minutes or until the chicken is fully cooked. Remove and shred the chicken.

    Sauté Onions and Garlic

    In a large skillet, heat some oil over medium heat. Add the chopped white onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

Making the Tinga Sauce

    Prepare the Sauce

    Add the shredded chicken back to the skillet with the sautéed onions and garlic. Stir in the chipotle peppers (with some adobo sauce) and the tomato sauce. Mix well and let simmer for about 10 minutes, allowing the flavors to meld.

Serving

    Assemble the Dish

    Serve the chicken tinga in bowls. Top with fresh cilantro, crumbled cotija cheese, and a drizzle of crema. Enjoy with tortillas or rice.
