Chicken Tinga Preparation

    Cook the Chicken

    In a pot, combine the chicken thighs, sliced onion, minced garlic, diced tomatoes, chipotle peppers, cumin, salt, pepper, and chicken broth. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, until chicken is cooked through.

    Shred the Chicken

    Remove chicken from pot and shred using two forks. Return shredded chicken back to the pot and stir to coat in the sauce. Simmer for an additional 5 minutes.

Queso Blanco Preparation

    Melt the Cheese

    In a saucepan over medium heat, combine white American cheese and milk. Stir until the cheese is melted and smooth.

    Add Jalapeño

    Add the diced jalapeño and cornstarch to the melted cheese mixture. Stir until well combined and thickened, about 2-3 minutes.

Assembly

    Layer the Nachos

    On a large serving platter, spread a layer of tortilla chips. Top with a generous amount of chicken tinga, followed by the queso blanco.

    Add Toppings

    Top the nachos with sliced jalapeños, pico de gallo, pickled red onion, crema, guacamole, and crumbled cotija cheese.

    Serve Immediately

    Serve the nachos hot and enjoy with extra crema and guacamole on the side.
