    Chop Vegetables

    Dice the green bell pepper and red onion into small pieces.

    Prepare Potatoes

    Wash and cut the potatoes into wedges, then boil them in salted water for about 5-7 minutes until slightly tender.

Cooking

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and peppers, and sauté for about 3-4 minutes until they become soft.

    Add Potatoes and Carnitas

    Once the vegetables are sautéed, add the boiled potato wedges and 1 cup of carnitas to the skillet. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the potatoes are golden and crispy.

    Cook the Eggs

    In a separate non-stick pan, prepare the eggs to your liking (fried, scrambled, or poached). Season with a pinch of salt.

Assembly

    Plate the Hash

    Once everything is cooked, serve the potato and carnitas hash onto plates.

    Top the hash with the cooked eggs and drizzle with chipotle aioli for added flavor.
